The Signature Edition is PineTales' take on the traditional Japanese sobakawa pillow: organic buckwheat hulls, no foam layers, no synthetic fill. The hulls contour to the gap between your neck and shoulders and lock in place, so the support you set at bedtime is still there at 3 a.m. Unzip the case to add or remove hulls and the pillow gets firmer or softer to match your shoulder width and sleep position.

Construction is the quiet upgrade here. The inner case is unbleached cotton twill that PineTales states is roughly 2 to 3 times thicker than the thin cotton shells on basic buckwheat pillows, closed with Japanese YKK zippers. Every pillow ships with a custom-fitted Egyptian cotton cover, removable and machine washable, so there is no separate pillowcase to buy. The 3D structure of the hulls keeps air moving through the fill, which is why buckwheat stays cooler than foam that traps heat.
